It's been one of those days.

Weeks and weeks can go by, and the ol' blog just sort of dries up, because well, I just run out of clever things to say. Or I get bitter, and who wants to read bitter? Sometimes I feel like I'm not being "real" by not posting the bitter, but I know I don't like to hear other people complain, and well, I don't like to complain, except to my husband, because sometimes he just deserves it. :)

But not today! I went for a run. (Get the whole hilarious breakdown here) and came home and Cooper had cooked dinner.

Yep. Fettucini Alfredo. At 3:30 in the afternoon.
I asked him what he was doing.
"Cooking dinner" says he...Like he is all shocked that I would ask that question.
"Why?" says I.
"Because I was hungry"
"Cooper...! Wha...Why...Wha"
"I just googled Alfredo recipes, and we had everything in the fridge, so I just decided to cook dinner and surprise you"

I, not being one to look a gift horse in the mouth, promptly shut mine and marvelled at yet another one of my spawn that is turning out to be a pretty OK kid.

(On top of that, other than the fact that it is a little heavy on the noodles--a culinary distinction that Cooper does not share with me my dissent--he being the pasta KING--it is actually quite good. Made with cream cheese no less!) So here is the recipe:

ALFREDO SAUCE
1/2 cup cream cheese
1 cup milk 0-2 %
3 tbsp freshly grated Parmesan cheese
1 clove of garlic
1 tbsp pepper
1/2 tsp salt
3 tbsp dry parsley/ 1/2 cup fresh
The best way to make this consistent is to use a blender, put cream cheese, milk, Parmesan, cheese, garlic, pepper and salt in blender. Blend until there are no clumps, poor into sauce pan on medium heat, cook for about 10 minutes, well cooking add parsley, is fresh chop finely and extra for garnish.

Cook your favorite pasta, I recommend spaghetti, if you want you may want to add chicken bacon any one of your favorite meats, I find it goes great with clams.

Pour desired amount over pasta, cook meat in sauce to absorb flavour into the meat, cook sea food in different pan and than add over pasta before pouring Alfredo Sauce.

If you find the original sauce using heavy cream and butter to be too heavy, then this modified, lighter version may be a healthier choice for you.

  1. How funny when you said he made dinner I couldn't help but laugh too! He is so stinkin cute and he must of really been hungry to actually make it normally they will find some kind of money laying around and go across the street! How funny but good for him maybe I'll give that recipe a try!!
